This is my go to easy chicken tomato curry. You can add or change with other meat or even do it in a slow cooker.
2 teaspoons coriander powder
2 teaspoons cumin powder
1 teaspoon turmeric
1 teaspoon garam masala
Garlic & ginger
salt & pepper
Chilli powder to taste (optional)
Coconut oil to fry with
1 onion, diced
1 tin of diced tomato
Coconut milk or coconut cream
Fry up diced onion and coconut oil in a frying pan, add in diced chicken breast or chicken thighs. Add in all the spices and saute. Add tinned tomato. You can also add in vegetables such as zucchini, sweet potato, potato and spinach. I add spinach to nearly everything. Simmer on low heat until well cooked.
Serve with rice or I usually just serve it as is in a bowl. If desired add in a splash of coconut milk or coconut cream at the end,
