This is my favourite muffin recipe. It is so easy and tastes good too. I have also make it into a whole chocolate cake instead of muffins.
8 eggs at room temperature
1/4 cup rapadura sugar
1/2 cup coconut oil
1/2 cup cacao powder
1/4 cup coconut flour
1 tsp Baking Powder
1 Tablespoon of vanilla essence
1/4 tsp of seaweed salt
6 Changing Habits cacao chocolate chips or other of chocolate chips
Blend up eggs, sugar, coconut oil, vanilla and salt together in a thermomix or high powered blender. Add remaining ingredients (except the chocolate chips) and mix until well combined. Place in cup cake molds or cup cake paper cups. I drop in about 6 cacao chips into each muffin, cook in 170c oven for approximately 15 minutes.
If you do not tell people these are a healthy version of a chocolate muffin, they would not even know :)
