Jo’s Chocolate Mug Cake

Also one of my Hubby’s favourites, his eyes light up when I suggest this for dessert.



1 egg

1 tablespoon melted coconut oil

1 tablespoon honey

1 tsp vanilla

1 tablespoon coconut flour

1 tablespoon of cacao

¼ teaspoon of Baking soda





Mix egg, oil, honey and vanilla together in a mug with a fork


Add remaining ingredients and mix well with a fork. microwave for 45 seconds depending on your microwave. We like it still gooey in the middle, otherwise cook for 1 minute if you want it cooked all the way through.


Serve with cream or cashew cream if diary free and drizzle pure maple syrup over top.
